Ingredients

  • 2 chicken breasts

  • 1 cup potatoes, quartered

  • 2 tbsp  homemade basil pesto

  • 1 cup Cherry  tomatoes

  • 1 cup Green beans

  • 2 tbsp olive oil

  • Himalayan salt and freshly ground pepper

Preparation

  1. Preheat the oven to 200 °C.

  2. Put the quartered potatoes into the baking dish and coat it with olive oil.  Put the baking dish in the oven and bake for about 30 minutes.

  3. Once done, remove the baking dish from the oven. Move the baked potatoes to one side, then add the chicken breasts. Make sure to grease the baking dish with some olive oil first before adding the chicken breasts.

  4. Season the chicken breasts with salt and pepper, then cover both baked potatoes and chicken breasts with homemade pesto.

  5. Put the dish back into the oven and bake for another 10 minutes, then remove from oven once done.

  6. Add the green beans and cherry tomatoes to the baking dish, season with salt and pepper, and put back into the oven. Bake for 10 more minutes until the chicken is cooked through.
