Recipe: Chicken Chorizo Cheese Baked Pasta

  • 300g gluten free rigatoni

  • 3 chicken breasts, cubed

  • 100g chorizo, sliced

  • 500g cherry tomatoes

  • 2 garlic cloves, crushed

  • 75g soft cheese

  • 150g mozzarella

  • Fresh basil

  • 2 tsp dried oregano

  • Grated parmesan cheese


  1. Put water in a large pot and bring it to a boil. Add at least a tablespoon of salt to the boiling water. This will add flavor to your chosen pasta.

  2. Put the 300g rigatoni or your pasta of choice in the boiling salted water. Stir the pasta often to prevent it from sticking to the pot.

  3. Taste the pasta to know if it’s already cooked. If it’s firm to the bite, it is ready for draining. Don’t forget to rinse the pasta after draining to get rid of starch. Set aside.

  4. Fry the sliced chorizo in a pan under medium heat, then add the garlic. Stir to avoid overcooking the chorizo.

  5. Add the chicken cubes to the pan and stir until golden brown. Throw in the cherry tomatoes and mozzarella cheese, soft cheese, and basil. Season with dried oregano, salt, and pepper to taste.

  6. Stir all ingredients well, allowing the cheeses to melt. Once it starts to boil, add the pasta and mix. Make sure that the pasta is well-coated with the sauce.

  7. Sprinkle with grated parmesan cheese. Put in the oven and bake at 200 degrees for 15 minutes. Once done, remove from oven and serve.
