Ingredients

  • 300g turkey breasts

  • 2 sweet potatoes

  • 3 tbsp avocado oil

  • ½ cup grated cheddar cheese

  • ½ cup mushrooms

  • 1 cup spinach

  • 1 tsp dried thyme

Preparation

  1. Preheat the oven to  200°C.

  2. Place the sweet potatoes in the baking dish and cover with avocado oil. Put in the oven and bake for 20 minutes.

  3. In a separate bowl, place the turkey and cover with avocado oil, then season with thyme.

  4. Remove the baking dish from the oven, then add the turkey breast. Season the turkey with salt and pepper before putting the baking dish back into the oven. Bake for 20 minutes.

  5. Meantime, prepare the spinach, sliced mushrooms, and grated cheddar.

  6. Remove the baking dish from the oven. Slice the sweet potatoes in half to create an opening at the center. Stuff it with the spinach and mushrooms, and sprinkle with grated cheese.

  7. Put back in the oven and bake for another 20 minutes.
