Recipe: Curried Chickpea with Spinach Sauté

Curried Chickpea? Why not? This vegan dish will leave you full and satisfied! Add spinach saute into the mix and you’re giving your health an even bigger boost! 

It’s perfect for hectic mornings as well because guess what? It will only take 30 minutes to get this meal prepared!  Make sure to squeeze this recipe in your meal plans because it’s so worth it!

Ingredients

  • 500g chickpea 

  • 200g baby spinach

  • 5 cloves garlic, minced

  • 1 lemon

  • 300g chopped tomatoes

  • 1 large onion, chopped

  • 3 tsp curry powder

  • 2 tsp cumin

  • ½ tsp Ceylon cinnamon

  • Fresh cilantro, chopped (for topping)

  • Green onions, chopped (for topping)

  • Avocado oil

  • Himalayan salt

  • Ground pepper

Preparation

  1. Cook rice.

  2. In a large skillet, sauté garlic in avocado oil over medium heat.

  3. Add baby spinach to the skillet. Season with Himalayan salt, and add lemon juice. Toss to coat the spinach. Once cooked, remove from heat and set aside.

  4. In the same skillet you used, add another 2 teaspoons of avocado oil over medium heat. Add onion and garlic and cook for about 5 minutes until the onions are soft.

  5. Put the chickpeas in the skillet, then add chopped tomatoes, cumin, curry powder, and cinnamon powder. Then, season with salt and pepper. Stir all ingredients well and cook for another 2-3 minutes.

  6. Remove from heat and put in the Karma lunch box. Top curried chickpea with green onions and cilantro.
