Recipe: Easy Avocado Pasta

Who says you can’t enjoy avocado in your pasta? This Easy Avocado Pasta recipe is unique, simple, and truly gratifying.

Ingredients

  • 200g gluten-free pasta

  • 3 small or 2 big  avocados

  • 1 clove of garlic

  • 2 tbsp extra virgin olive oil

  • 1 tbsp lemon juice

  • ½ cup basil leaves

  • Handful pecan nuts

Preparation

  1. Bring water to a boil in a large pot. Salt the water with at least a tablespoon to add flavor to the pasta.

  2. Place the pasta to the pot of boiling water. Stir often to prevent the pasta from sticking to the pot. Do this until your pasta is cooked. Once done, drain the pasta, and set aside.

  3. Meantime, make the sauce. Put avocados, basil leaves, garlic, lemon juice, and olive oil to the food processor. Blend all ingredients well.

  4. In a huge bowl, put the pasta, and then add the sauce. Mix until the pasta is covered with the sauce.

  5. Season with salt and pepper, and drizzle with some olive oil. Mix well again, then top with pine nuts.
