Recipe: Vegan Butter Chickpeas

Ingredients

  • 1 tbsp coconut oil

  • 1 onion, cubed

  • 3 cloves garlic, sliced

  • 1 tsp fresh ginger, grated

  • 2 tbsp garam masala

  • 1 tbsp cumin

  • 1 tbsp paprika

  • 400ml canned tomatoes

  • 400ml coconut milk

  • 2 tbsp cashew butter

  • Fresh coriander

  • Himalayan salt and freshly ground pepper

Preparation

  1. Heat coconut oil in a large pan and sauté the garlic, onion, and ginger for 2-3 minutes. Add the garam masala, cumin, and paprika. Stir well and cook for another minute until fragrant.

  2. Add the canned tomatoes, coconut milk, and chickpeas. Then, season with Himalayan salt and pepper. Stir and cook for 10 minutes.

  3. Stir in the cashew butter, and freshly chopped coriander.

  4. Sprinkle with the rest of coriander, and serve with Basmati rice.
