Ingredients

Salad

  • 1 Sweet potato

  • 1 tbsp extra virgin olive oil

  • 1 cup Rocket salad

  • ⅓ cup Pecan nuts

  • 90g Goat cheese 

Dressing

  • 1 tbsp Honey

  • 2 tbsp Lemon juice

  • 2 tbsp extra virgin olive oil

  • ½ tsp Dijon mustard

  • Himalayan salt and freshly ground pepper

Preparation

  1. Preheat the oven to 200°C.

  2. Peel off the sweet potato and cut it into thick slices, then cut the slices into quarters. Put them in a baking dish.

  3. Drizzle the quartered sweet potatoes with olive oil, and season with salt and pepper. Make sure that they are well-coated.

  4. Put the baking dish in the oven and roast for 20 minutes.

  5. While the sweet potatoes are roasting, prepare your dressing. In a bowl, mix olive oil, honey, lime juice, dijon mustard, and pepper.

  6. Take the baking dish out of the oven. Transfer your roasted sweet potatoes in a bowl. Add rocket, goat cheese, and pecan nuts. Drizzle with the dressing, and toss gently.
